BROCCOLI & SMOKE CHEDDAR SOUP

The twist of lemon elevates the broccoli flavor in this hearty soup.

Melt 2 tablespoons butter in a soup pot over medium heat.
Add 1 medium leek or onion, coarsely chopped. Saute until tender, about 5 minutes.
Peel and cube 2 medium potatoes (about 2 cups) and add to the onions, along with 2 cloves minced garlic.
Add 6 cups vegetable broth or water and bring to a simmer for 20 minutes until potatoes are tender.
Trim 1 head broccoli into bite sized florets, add to the broth and simmer for 10 minutes until tender.
Puree the soup in blender or with immersion blender.
Whisk in 2 tablespoons lemon juice, 1-cup yogurt and 2 cups grated cheddar cheese.
Season with salt and pepper.
Serve hot.
